SPICY TUNA BURGERS

Prep Time 10 minutes - Total Time 15 minutes - Makes 3


I’ve given that classic lunchtime favourite tuna sandwich a makeover and turned it into a spicy tuna burger. This was a hit and all 3 of my kids, they loved it, success!


I’ve used tin of tuna along with some other bits to form the burger patties. Made a spicy mayo, a bit of lettuce and job done.


Ingredients

  • 2 x 145g tins of tuna.

  • 2 spring onions, roughly sliced.

  • 40g of sweetcorn.

  • 1 red chilli, roughly chopped.

  • 1 small handful of fresh coriander, roughly chopped.

  • 2 tbsp of mayonnaise.

  • 2 tbsp of plain flour.


Method

  1. Drain the tuna thoroughly and place it into a bowl. Add the rest of the ingredients to the tuna, season and mix well.

  2. Shape the mixed tuna into burger patties. You can cook them straight away or place them onto a plate, cover them with clingfilm and pop into the fridge to set for 1 hour.

  3. Add a splash of oil into a nonstick fry pan. Cook the patties over a medium to high heat for around 2 minutes on each side. You are looking at getting a nice crust on each side.

  4. Once out of the pan place on some kitchen paper. Toast your buns and spread on your favourite sauce. I made a spicy mayo by combining chilli sauce and mayonnaise. Add some lettuce serve and enjoy.
