SLOW COOKER PULLED CHICKEN

Cooking Time 5 hours - Feeds 5-6


Effortlessly delicious! This slow cooker pulled chicken recipe is packed with flavor and requires minimal prep - simply toss everything in the pot and let it work its magic while you go about your day.


Ingredients

  • 1kg boneless and skinless chicken thighs.

  • 200g tin of sweetcorn, drained.

  • 4 pineapple slices.

  • Juice of 3 limes.

  • 1 large red onion, finely sliced.

  • 1 yellow pepper, finely sliced.

  • 4 garlic cloves, roughly chopped.

  • 1 tsp of ground ginger.

  • 1 tsp of dry mint.

  • 1 tbsp of cumin.

  • 1 tbsp of smoked paprika.

  • 1 chicken stock pot.

  • 2 tbsp of tomato purée.

  • 350 mls of water.

  • Chilli flakes, optional and to taste.


Method


  1. Simply add all the ingredients, apart from one of the limes, to your slow cooker. Season, mix, pop on the lid, leaving a gap, and set on high for 5 hours.

  2. Once done, shred everything using two forks, squeeze in the remaining lime, check for seasoning, and stuff into a tortilla wrap topped with your favorite toppings.
