The secret to this pasta bake is good quality sausages. Mixed with chorizo, veggies, pasta and cheese, satisfaction guaranteed.
Ingredients
200 g of pasta of your choice.
6 good quality sausages.
80 g of chorizo, roughly sliced.
1 handful of pitted olives, black or green.
1 small courgette, roughly sliced.
1 small onion, roughly sliced.
70 g of ricotta.
450 g of Passata or tomato sauce.
Method
Cook your pasta according to the packet then place to one side.
Fry the sausages in a drizzle of olive oil over medium-low heat till they are a lovely light golden colour, roughly 7 minutes. Once done remove from the pan and place to one side.
In the same pan add the onions, courgettes and chorizo. Season with salt and pepper and cook over a low heat for 10 minutes.
Once the 10 minutes are up transfer to a roasting dish and add the pasta, passata, the sausages (at this point I like to cut them into bite-size pieces) and mix well. Add the olives and the ricotta and pop into a preheated oven set at 200℃ for 5-7 minutes.
Once out of the oven I like to drizzle with some extra virgin olive oil, a sprinkling of chilli flakes and serve with a side salad, a cold beer and a fresh baguette.
