Traybakes possibly the easiest food you’ll ever cook and eat. The combinations are endless but I do like a sausage traybake. Throw everything into a roasting tray season to perfection and you are good to go.
Whenever I use sausages in this way I like to mix them up so I always use 2 different types of sausages. And in this recipe, I used classic British pork sausages as well as pork sausages with caramelised red onions.
Ingredients
12 good quality sausages.
1 medium butternut squash, cut into 2cm thick half-moons.
2 red onions, cut into wedges.
2 tsps of harass paste.
150 ml of water.
1 x 540g tin of new potatoes in water.
Method
In a large roasting tray add the butternut squash along with the harass, a good drizzle of olive oil, season and give it a good mix. Pour in the water and pop into a preheated oven set at 180 g for 20 minutes.
Once the 20 minutes are up remove the roasting tray from the oven, add the rest of the ingredients and give it a little drizzle of olive oil. Pop it back into the oven and cook for another 30-35 minutes. Serve with some nice baguette for mopping up the juices.
