Cooking Time 15 minutes - Serves 2
This is what you call fast food, fridge to table in under 15 minutes. When you think you don’t have time to cook, this is the recipe you need.
Ingredients
200g of your favourite pasta.
4 good quality sausages.
1/2 leek, thinly sliced.
2 tbsp of cream cheese.
1 red chilli, sliced.
1 tsp of nduja.
Splash of pasta water.
Method
The first thing to do is get the pasta on the go. By the time the pasta is cooked, the sauce will be ready.
Get a large nonstick, frying pan over high heat and add a splash of oil. Take the skins off the sausages then break the meat up into the pan. Cook over a high heat for 5 minutes so the sausages get nice and golden and crispy on the edges.
Turn the heat down to medium then add the leeks, chillies and cook for another 3-4 minutes.
Next, add the cream cheese, nduja, mix into the sausages and leeks and continue to cook for another couple of minutes.
Now, add a little splash of the pasta water to loosen up the sauce then check for seasoning. Drain the pasta and stir into the sauce. Serve with fresh Parmesan and a few fresh herbs.
