ROASTED TOMATO PASTA

Pasta doesn’t always have to come with a sauce. Just a few simple ingredients roasted with olive oil, balsamic vinegar then tossed with your favourite pasta. Simple, delicious and ready to eat in under 30 mins.

Ingredients

  • 200 g of pasta of your choice.

  • 250 g of cherry tomatoes, keep small ones whole and bigger ones cut in half.

  • 1 small onion, finely sliced.

  • 70 g of pitted black olives.

  • Chilli flakes, to taste.

  • The leaves from a few fresh thyme sprigs.

  • 3 tbsps of balsamic vinegar.

  • 5 tbsps of olive oil.

  • A handful of fresh basil.

Method

  1. Place all the ingredients apart from the pasta and the basil into a roasting tray, season, mix well and pop into a preheated oven set us 160℃ for 20 minutes.

  2. When the tomatoes have been in the oven for 10 minutes get your favourite pasta on the go, cook it according to the packet.

  3. Once the tomatoes and pasta are done, drain the pasta and add to the roasting tray. Tear the basil and mix through.
