ROASTED RED PEPPER AND NDUJA PESTO

If you like normal pesto you are going to love this version. Just as easy to make but with an extra couple of bits and it is soooooo good.

Mix into your favourite pasta and you’ll have a beautiful dinner in 10 minutes.

Ingredients

  • 1 large bunch of fresh basil.

  • 3 roasted red peppers, from a jar.

  • 30g of Parmigiano Reggiano, grated.

  • 30g of pine nuts.

  • 2 garlic cloves.

  • 2 tsp of Nduja.

  • 100ml of good quality olive oil.

Method

  1. First, get a frying pan over a medium heat and dry fry the pine nuts till golden brown, but keep an eye on them because they will catch and burn.

  2. Place the pine nuts into a food processor along with all the other ingredients apart from the oil and whizz to break everything down.

  3. Open the food processor and scrape down the sides. Pour in the oil and whizz again till you reach a consistency you are happy with. Finally, check for seasoning and serve with your favourite pasta. I like to add some fresh rocket, Parmigiano Reggiano and a nice drizzle of extra-virgin olive oil over the top.
