PIRI PIRI AIRFRYER CHICKEN

Cooking Time 15 minutes - Serves 2-3


Tangy and spicy tender chicken, ready to eat in under 20 minutes. Now, that’s what you call fast food done right.


Ingredients

  • 600g of skinless and boneless chicken thighs.

  • 3 roasted red pepper, from a jar.

  • 1 small onion, cut into quarters.

  • 3 garlic cloves.

  • 1 small handful of fresh coriander.

  • 1 lemon, juice only.

  • 1 pinch of chilli flakes or to taste.

  • 1 tbsp of smoked paprika.

  • 1 tsp of dried oregano.

  • 4 tbsp of extra-virgin olive oil.

  • 3 tbsp of red wine vinegar.


Method


  1. Place all the ingredients, apart from the chicken, into a food blender. Season and whiz until smooth. Check for seasoning and adjust accordingly. Now, pour the mixture all over your chicken. At this point, you can either cook the chicken straight away, or if you have time, leave it to marinate for as long as you can.

  2. Pop the chicken into your air fryer set at 200°C and cook for 15 minutes or until cooked through. If you don't have an air fryer, you can simply put it in the oven or under a hot grill.
