NDUJA AND LIME ROAST CHICKEN

Prep Time 15 minutes - Total Time 1 hour 15 minutes - Serves 5


If you are one of those people that say roast chicken is boring, then you need to give this recipe a go. Trust me, you’ll love it and be making it time and time again.

Ingredients

  • 2.2kg whole chicken.

  • 125g of butter, room temperature.

  • 2 tsp of Nduja.

  • Juice from 2 limes.

  • A small handful of fresh parsley, roughly chopped.


Method


  1. Into a bowl add the butter, Nduja, lime, parsley, season and mix.

  2. Carefully separate the chicken skin from the meat then smear all the butter mixture under the skin. Season the inside of the chicken then pop a couple of the limes in. The chicken is now ready to cook or you can leave it to till you are ready to roast it.

  3. When you are ready to roast the chicken drizzle a little olive oil over the chicken and season. Then pop into a preheated oven set at 200° for 1 hour or till the thickest part of the chicken reads 75° on a digital thermometer. I cook it until the breast reads 70° then remove from the oven and allow to rest for 10 minutes, in that time it will reach 75°.

  4. Carve the chicken then then spoon over any pan juices. I like to serve this with some chimichurri and cubed roast potatoes. For the potatoes I cut them into cube, bite-size pieces, then parboil for about 10 minutes. Toss with fresh thyme, smoked paprika, garlic, olive oil, seasoning and roast till crispy and delicious.
