You know it's a quick dish when the pasta takes longer to cook than the sauce. This has to be hands down the quickest pasta dish ever.
It’s so simple to make that it’s not even really a recipe, perfect for when you don’t have much in the fridge and you are in a hurry. Also if you have some diced pancetta this would work amazing in this recipe.
Ingredients
200 g of pasta of your choice.
30 g of butter.
1 lemon, juice only.
20 g of parmesan cheese, freshly grated.
1 tsp of capers.
Method
The first thing to do is get the pasta on and cook it according to the packet. Once the pasta is 2 minutes away from being ready get a pan over a medium heat.
Get the butter into the pan then once melted and starting to bubble squeeze in your lemon followed by the capers. Then add the cheese and give it a good mix so it starts to melt.
The pasta should now be ready, so using a pair of tongs drag the pasta over to the pan along with a little bit of the cooking water. Give it a good mix check for seasoning and add lots of freshly cracked black pepper.
Told you this was quick, divide among 2 bowls and tuck in.
