INDIAN BAKED EGGS WITH LENTIL FLATBREADS

Spice up your breakfast with this cracking dish.


A spicy fragrant tomato sauce with runny eggs, can you think of a better way to start the day. Plus some flatbreads for scooping up all that goodness.


Baked Eggs Ingredients

  • 400g tin of chopped tomatoes.

  • 1 onion, diced.

  • 1 red or green chilli, sliced (seeds in or out).

  • 1 thumb piece size of ginger, grated.

  • 2 garlic cloves, grated.

  • 1 tbsp of garam masala.

  • 1 tsp of turmeric.

  • Juice from 1 lime.

  • 4 free-range eggs.

  • Fresh coriander, roughly chopped.

Flatbread Ingredients

  • 100g of red split lentils.

  • 200g of water.

  • Pinch of salt.

Method

  1. Start by preheating your oven to 200°. Set an oven-proof frying pan over a low-medium heat with a splash of oil and add your onions, chillies, ginger, garlic and a pinch of salt. You want to fry these for around 10 minutes or until they just start to soften but without colouring too much.

  2. Next to go in the pan is the garam masala and turmeric. Continue cooking for another minute before adding the tinned tomatoes and season with salt and pepper. With the empty tin fill it a quarter of the way with hot water, give it a good swirl and add it to the pan. Give everything a good stir, turn up to high and continue cooking for a further 5-10 minutes, so that the sauce comes together. You will know when the sauce is ready when you make a well in the sauce and it holds for a moment.

  3. Once the sauce is ready add the lime juice them make 4 wells and crack an egg in each one. Place the pan in the oven for around 5 minutes depending on your oven and the size of the eggs. You want the whites set but left with runny yolks so keep an eye on it as you don’t want to overdo the eggs.

  4. Once out of the oven sprinkle with coriander, a few extra chillies and a few dollars of yoghurt mixed with mango chutney.

  5. For the flatbreads add the lentils, water and salt to a food blender and leave to soak for an hour. Then whizz till completely smooth. To cook get a nonstick pan over a medium heat and add a drizzle of oil. Pour in some of the mixtures and cook for a minute on each side and repeat.
