HARISSA CHICKEN KEBABS

Cooking Time 30 minutes plus marinating time - Serves 5-6


Remember, people, kebabs are not just for late-night munchies after a beer-fueled night; they are for life! And when they are this good, they could be an everyday thing!


Ingredients

  • 1kg of boneless skinless chicken thighs.

  • 3 tbsp of yogurt.

  • 2 tbsp of honey.

  • 1 tbsp of rose harissa paste..

  • 1 tbsp of garlic paste.

  • Juice from 1 lemon.


Method


  1. Place all the ingredients into a bowl or Tupperware, season, and mix well. Cover and leave to marinate for a few hours, even better overnight. Take the chicken out of the fridge an hour before cooking.

  2. Place the chicken in a roasting tray on a rack and put it into a preheated oven set at 200°C. Roast for 20-30 minutes or until cooked through. Alternatively, you can put it under a hot grill, or if you have one, you can use a kebab spike like I do https://www.thekebabspikeco.co.uk/ . The chicken will take longer if you are using the spike, around 50 minutes. For the best result, use a digital thermometer and once it reaches 74°C, you are good to go. Once out of the oven, slice and serve with flatbreads, salad, and your favorite condiments. ENJOY!
