CHRISTMAS SAUSAGE AND BRUSSELS SPROUT PASTA

If like me you hate the dreaded Brussels sprout that raises its ugly head every year, it’s time to love them.


Don’t run and hide anymore, don’t avoid them in the supermarket! Instead, pick up a bunch and give them a go in this quick and easy Christmas pasta recipe, it’s a game-changer!


Ingredients

  • 2 good quality sausages, skinned and broken up into little nuggets.

  • 1 small red onion, finely diced.

  • 6 brussels sprouts, finely sliced.

  • 1 knob of butter.

  • 100 g of whole cooked chestnuts.

  • 2 tbsps of double cream.

  • 200 g of pasta of your choice.

Method

  1. Start by getting your chosen pasta on the go, cook according to the packet in salted boiling water. (Don’t throw away the pasta water ones cooked).

  2. Get a frying pan over a high heat and fry the sausage nuggets in a drizzle of olive oil. Cook till nice and golden, crispy and gnarly looking, should only take a couple of minutes.

  3. Turn the heat right down to low, add the onions, the dreaded sprouts, the knob of butter, season and gently fry for around 4-5 minutes. You want to cook the onions and sprouts till nice and tender. Then take the chestnuts, break them up in your hand, add to the pan and continue cooking for another couple of minutes.

  4. Now add your pasta to the pan along with a small splash of the cooking water (like 2 tbsp) add the cream, turn up the heat and simmer for a minute. If you add too much water just continue cooking till reduced. Check for seasoning and serve.

  5. Dish up the pasta between two bowls and if like me add some chilli flakes.
