It’s beginning to smell a lot like Christmas and with my mince pie wheels, it’s going to taste a lot like it as well.
If you normally buy mince pies and leave one out on Christmas Eve how about having a go at making these this year. A great activity to do with the kids and I’m sure the big man in red will enjoy them with a little glass of something nice.
Ingredients
400 g of good quality mincemeat.
4 pieces of stem ginger in syrup, roughly chopped.
1 tsp of mixed spice.
50 g of dried cranberries.
1 clementine, zest and juice.
1 x 320g of ready rolled puff pastry sheet.
1 egg yolk, whisked.
1 tbsp of light muscovado sugar.
Method
In a large bowl mix together the mincemeat, ginger, mixed spice, cranberries and the clementine.
Roll out the pastry sheet, keeping it on the paper it’s rolled in. Evenly spread the mixture so to cover the pasty. Then roll your pastry sheet lengthways so it looks like a Swiss roll.
Take a sharp knife and cut into 1-inch slices, you should get around 10 or 12 and place onto a lined baking tray, cut side up.
Brush with the egg yolk, sprinkle with the sugar and pop into a preheated oven set at 200℃ for 12-15 minutes, just keep an eye on them.
To serve I’d like to give them a dusting with some icing sugar and a good drizzle of some brandy sauce.
