BAKED GREEK PRAWNS

Prep Time 10 minutes - Total Time 20 minutes - Serves 2


What is your favourite seafood?

Mine is 100% prawns!


And this is a really simple and tasty way to eat them, a true one-pot wonder. The only thing that would make these better would be, if you were sitting on the beach eating them with your feet in the sand.


Ingredients

  • 1 small onion, roughly chopped.

  • 400g of passata.

  • 1 tbsp of runny honey.

  • 1 handful of peas.

  • 1 handful of olives.

  • 1 lime.

  • Chilli flakes, optional and to taste.

  • 10 large whole prawns.

  • 40g of feta.

  • 1 handful of fresh parsley, roughly chopped.


Method

  1. Into an ovenproof dish add the onions, passata, honey, peas and olives. Squeeze in half of the juice from the lime, season, add the chilli flakes if using and give it all a good mix.

  2. Arrange the prawns on top of the sauce, crumble over the feta, drizzle with some extra virgin olive oil and add a little sprinkling of flaky salt.

  3. Pop into a preheated oven set at 200° for 10 minutes or till the prawns are cooked. Once out of the oven squeeze over the juice from the other half of the lime and sprinkle over the chopped parsley. Serve immediately along with some beautiful crusty bread for dipping and mopping up the sauce.
