It’s no big secret that I love pasta, probably a little too much, probably need rehab, but pasta is life and a life without pasta is not worth living.
I especially love a pasta dish that can be on the table in less than 15 minutes and this is one of those dishes. Easy and quick to make and super tasty.
Ingredients
200 g of pasta of your choice.
4 smoked streaky bacon rashes, roughly chopped.
A handful of fresh herbs, roughly chopped.
30 g of pine nuts.
30 g of frozen peas.
70 g of asparagus tips, roughly chopped.
2 tbsps of pesto sauce.
Method
First things first, get the pasta on because this is a really quick recipe. When the pasta is done, save a little of the cooking water.
Get a frying pan over a low heat, add the pine nuts and toast for a couple of minutes. Once they are nice golden colour pop to one side, be careful they will turn on you if you don’t keep an eye on them.
Add a little drizzle of olive oil to the frying pan, followed by the bacon and asparagus. Fry over a medium to high for around 3-4 minutes or till the bacon just starts to get golden brown and crispy.
Throw in the peas and give that no longer than a minute. Then add the pesto, mix in and give that a minute.
Finally at the pasta to the pan, along with a little splash of the pasta water and mix well. Add the pine nuts, season, mix in the herbs and your good to go. Finish off with a little drizzle of extra-virgin olive oil.
