Prep Time 5 - Total Time 15 minutes - Makes 1

Christmas for me is all about food, family, friends, presents under the Christmas tree, snow (hopefully) and more food.

Now Christmas dinner or even cheese and crackers would not be complete without cranberry sauce. And the smell in the kitchen when you make this is incredible.

Ingredients

  • 1 large Bramley cooking apple, peeled and cut into cubes.

  • 400 g of frozen cranberry’s.

  • 150 g of caster sugar.

  • 1 tbsp of ground mix spice.

  • 1 tsp of ground ginger.

  • 3 clementines.

  • 100 ml of water.

  • 3 cinnamon sticks.

  • 4 star anise.

Method

  1. Squeeze the juice of the clementines into a pan along with the clementines then add the rest of the ingredients. Bring to a boil then turn the heat right down and simmer for around 10-15 minutes or until the Cranberries an apples have broken down. Once the sauce has come together and has thickened you are good to go.

  2. Store in the fridge but serve at room temperature.
